Full tasting note and wine making – Domaine Garnier Chablis Premier Cru Mont de Milieu from Chablis in France is a traditional Chablis which has a vanilla nose followed by a rich and textural palate with ripe fruit and added depth from oak ageing. When young the wine is very tight knit but gradually opens up in bottle to reveal the quality Chardonnay fruit notes that have a lingering soft vanillary oaky edge especially on the finish. The vineyards are family owned in Ligny le Chatel the most northerly part of the Chablis appellation and thus have a very fresh thread of persistent acidity to balance the rounded fruit from the long natural fermentation which in some years can take five months. The aromas are very fragrant with a youthful acidity balanced by a hint of honey. The producer – Domaine Garnier Chablis is a family domaine now managed by two brothers: Xavier Garnier in the vineyards and Jerome Garnier in the winery both of whom pride themselves on using production methods that respect the environment. The winery is based in Ligny le Chatel near to their twenty four hectares of vineyards in the northern part of Chablis. The soil here is a mixture of stony chalk with a little marl so the wines have minerality and rounded notes. The vineyards were planted in 1985 and the first vintage made by the brothers after taking over from their father was in 1992.
