Hattingley Valley has quickly established itself as one of the UK’s most successful wineries, winning an abundance of awards, trophies and commendations. Made in the traditional way from grapes nurtured on Hampshire chalk, a small proportion of the wine is fermented in old white Burgundy barrels to soften it up and add texture and complexity to the finished wine. After second fermentation in bottle the wine is left to age on the lees for 3 years to add roundness and character, before release. Intent of making the finest English sparkling wine, and one to rival the very best in the world, Nyetimber were the first producer to make English Sparkling Wine exclusively from the ‘Champagne varieties’: Chardonnay, Pinot Noir and Meunier. Despite ever-increasing demand for their sparkling wines, they continue to use only estate-grown grapes. This led to considerable vineyard expansion from 2006, with the estate now compromising of 327 hectares under vine across Sussex, Hampshire and Kent.
