Torabhaig, the second licensed distillery on Skye, works with a level of intent unusual for such a young operation. Built within a restored 19th‑century steading, it focuses on slow, controlled fermentations and a clear understanding of how peat, fruit, and structure can be shaped rather than left to chance. The result is a modern island distillery that feels grounded in tradition but unafraid to define its own style: coastal, smoky, and deliberately composed. Sound of Sleat is the gentler face of that approach. The peat is present but restrained, giving soft smoke, warm barley, and a touch of coastal breeze rather than heavy phenolics. Bright citrus, green apple, and a clean cereal sweetness sit underneath, keeping the whisky fresh and open. On the palate it’s supple and lightly oily, with mellow smoke, lemon peel, sweet malt, and a faint herbal edge that adds definition.
