Grapes for the Mohua Sauvignon Blanc are sourced from the three premium Wairau Valley sub-regions each selected for the distinct characteristic each location brings to the wine. The cool climate enables a long, slow ripening period for the fruit, resulting in intensified flavours and a wonderful naturally crisp acidity. We let the wild yeasts that live in our vineyard ferment the grape juice into wine. Working this way does take more time, but we get wines with added savouriness and more mouth-watering textures and flavours. They also show a unique sense of place.
