Intro to Adobe Organic Reserva Cabernet Sauvignon – Adobe Organic Reserva Cabernet Sauvignon is from the Central Valley with delicious vibrant blackcurrant fruit and spice notes on nose and palate. Full tasting note and wine making – The aroma of the Adobe Organic Reserva Cabernet Sauvignon includes bright fruity damsons, plum and spices, balanced with the sweet and toasted notes of wood. The palate has appealing blackcurrant, well structured tannins, and a persistent flavour including hints of cherries. The grapes are grown in the Central Valley that stretches from the Maipo to the Maule Valley. This zone presents good draining and fertility, especially for red varieties like Cabernet Sauvignon and Carmenere. It has a Mediterranean climate, with hot summers characterized by having big temperature differences between day and night, and cold, rainy winters. This makes the grape grow well. The floor has an alluvial origin and its profoundness is ideal for agriculture. The grapes was hand harvested at the end of April followed by fermentation in tanks. Malolactic fermentation followed naturally. Part of this wine ages for 6 months in oak barrels providing a layer of complexity and some spice and pepper. The producer – The Adobe range of wines are made by Emiliana. This is one of the world’s most important producers of organic and biodynamic wines and the largest in South America. They have a total of 997 hectares under vine in the valleys of Casablanca, Maipo, Colchagua, and Cachapoal. 923ha are IMO certified organic and the remaining 77 in conversion. Their spectacular biodynamic vineyard and winery at Los Robles is a model that attracts visiting viticulturalists and winemakers from all over the world. General Manager José Guilisasti and winemaking consultant Alvaro Espinoza were key to establishing this project to convert a large commercial winery into a commercially viable organic one.
