Intro to Latour Domaine de Valmoissine Pinot Noir – Latour Domaine de Valmoissine Pinot Noir is a deliciously vibrant balanced fruity Pinot Noir from the Var region in the South of France. Full tasting note and wine making – The wine has a bright color with purple tints. It offers intense fruit aromas and is gorgeously spicy with a rustic grip. It is harmonious with ripe tannins and balanced acidity. Bellevue Pinot Noir, Domaine de Valmoissine’s signature wine, is made from a selection of the Domaine’s best parcels located around the charming village of Moissac-Bellevue. It is a high altitude site and provides plenty of sunshine with cooler temperatures. This helps to ensure the grapes ripen slowly, on low yielding vines, avoiding jammy flavours or too much alcohol. Winemaking is simple and employs traditional Burgundian techniques. Whole bunches of grapes are pressed and fermentation takes place in open topped vats and the wine undergoes maololactic fermentation and 10 – 12 months aging in stainless steel vats. In 1989 Maison Latour pioneered the production of Pinot Noir in the Var, capitalising on its high altitude, southerly climate and cool nights to produce an elegant wine with astounding finesse. The low yielding Pinot Noir grapes are harvested by hand and barrel-aged in the Burgundian tradition. The producer – In the late 1980’s Latour set out to find an alternative location to grow Pinot Noir. They settled on a high altitude site by a former monastery in northern Provence, sitting at 500m above sea level in the Verdon Hills. Pinot Noir was not known to grow successfully in the high temperatures of Southern France but the high altitude location helped to temper the warm Provence summer days and brought cool nights and the benefits of the Mistral wind. Unlike the Ardèche where a partnership was forged with local growers, Latour planted their own vineyards and created Domaine de Valmoissine.
