Intro to Adobe Organic Reserva Carmenere – Adobe Organic Carmenere from Colchagua in Chile is Carmenère at its best with bags of ripe fruit balanced by impressive structure of full spicy flavours. Full tasting note and wine making – The Adobe Organic Carmenere has rich cherry fruit, hints of capsicum, clove and black pepper on the nose with a palate of smooth berry fruit, robust and full-bodied with ripe well-balanced tannins and a refreshing sappy flavour to the finish. The grapes are grown in the Colchagua Valley in the Central Valley region near Santiago where the climate is Mediterranean with hot summers but with cool night temperatures which helps the natural fruit freshness. The soils here are alluvial with good drainage. The grapes were hand-picked in late April and underwent a week long pre fermentation cold treatment at 8ºC to extract more fruit character. Malolactic fermentation took place naturally and 20% of the wine was aged in French oak for 6 months creating a delicious more complex wine. The producer – The Adobe range of wines are made by Emiliana which is one of the worlds most important producers of organic and biodynamic wines and the largest in South America. They have a total of 997 hectares under vine in the valleys of Casablanca, Maipo, Colchagua, and Cachapoal of which 923ha are IMO certified organic and the remaining 77 in conversion. Their spectacular biodynamic vineyard and winery at Los Robles is a model that attracts visiting viticulturalists and winemakers from all over the world. General Manager José Guilisasti and wine making consultant Alvaro Espinoza were key to establishing this project to convert a large commercial winery into a commercially viable organic one.
