Intro to Chateau L’Ermite d’Auzan Rose – Chateau L’Ermite d’Auzan Rose from Costiere de Nimes in the South of France is a delicious modern Southern rosé packed with meaty rich fruit flavours. Full tasting note and wine making – Chateau L’Ermite d’Auzan Rose from Costiere de Nimes is brightly salmon pink with an explosion of fruit on the nose, and it is rounded with a well-balanced harmony of spices and fruits on the palate. It is a meaty, rich and appealing rosé with cranberry flavours throughout and a balancing richness of fruit: a great food wine. The vines are on average 25 years old with yields of 50hl/ha grown in the Durance River Valley which predates the Rhône. The grapes are cooled on reception prior to being destemmed and the free run juice is again cooled before fermentation at 18ºC then aged on its lees for 3 months. The producer – Château l’Ermite was founded in the XIth Century by the hermits of Ste Cécile d’Estagel Abbay. It is situated on the pilgrimage route of Santiago de Compostella. The estate’s total surface covers 80 hectares of sunny south facing vineyards, which benefit from the airy Mediterranean climate. The domain’s owners for the past 30 years have been Michel and Jérôme Castillon. The work they accomplish allows the grape to breathe out and the use of oak barrels for ageing is restricted as much as possible.
