Full tasting note and wine making – The Painted Wolf The Den Pinotage Rose from Paarl is a fine fruity wine with cherry, strawberry, peach and mineral aroma and a fresh lingering finish. Jeremy Borg set out to make the finest most elegant dry rosé possible from handpicked grapes taken to the cellar at Rheebokskloof where the wine making team of Trizanne Barnard and Rolanie Lotz were tasked to make the best possible rosé using the lightest and most elegant of pressings. The wine cold fermented in tank and was finished with Viognier lees. The wine is a true English rose. The Pinotage grapes were sourced from a number of blocks of older vines in Paarl and the grapes are hand harvested into small baskets and after pressing were left on skins for roughly 6 hours and the juice drawn off the skins and cold fermented in tank. This wine is delicious as a young wine but will gain complexity and interest with a couple of years of bottle aging.
