This vintage was born from the meeting between a Japanese chef and an Alsatian winemaker. The result is a “mischievous”, surprising and elegant wine. Very aromatic, at the same time spicy, floral and buttery on the nose, fresh on the palate, with a very, very slight roundness, just enough to cope with sauces and spices. “Gyotaku” is a traditional Japanese art. Mittnacht were one of the first domaines in Alsace to convert to biodynamic viticulture in 1999. Christophe believes in minimum intervention, and allowing the soil to express the minerality of each terroir. These wines are super gastronomical, pure fruit, sharp acidity and lovely minerality.
