They use locally grown cork, lighter glass bottles and no added sulphites. Carcassonne sits in the western Languedoc, where Atlantic and Mediterranean influences meet. The area is windy, with well‑drained soils of limestone, clay, and ancient alluvial deposits. The climate is warm but moderated by elevation and airflow, giving good natural acidity and clean ripening. Their Pet‑Nat, Vivant, is made entirely from Souvignier Gris, a resistant variety well‑suited to their philosophy.
