Domaine Fournillon is a long‑established family estate based in Epineuil, just north of Chablis, where Kimmeridgian limestone and cool Burgundian nights shape their clean, precise style. They farm their vineyards with a focus on low‑intervention work and produce Crémant de Bourgogne using traditional‑method secondary fermentation, giving the wine fine bubbles and a clear regional imprint. The Crémant is crisp and understated, showing citrus, green apple and a light floral note. The palate is fresh and balanced, with tight bubbles, subtle brioche from the lees ageing and a dry, mineral finish.
