Bodegas Cesar Florido are one of the oldest sherry producers in the region. They are based in the small coastal town of Chipiona, to the west of Sanlucar and only 50 metres from the Atlantic ocean, closer than any other Jerez bodega. The Palomino grapes for this fino come from their Miraflores vineyard. The wine is aged all year round under ‘flor’ a veil of yeast that gives a fresh, salty character, accentuated by the proximity to the sea. An incredibly versatile wine, wonderful as an aperitif on it’s own or as a partner to anchovies, olives, almonds and cured meats. It will seamlessly match all manner of seafood, Asian and Mediterranean dishes.
