Distilleria Quaglia’s Kummel has the kind of quiet, old‑world charm that comes from a producer with real roots. The Quaglia family has been distilling in Castelnuovo Don Bosco in Piedmont since the late 1800s, working with local botanicals and traditional methods long before “craft” became a marketing term. Their approach to liqueurs is still very much hands‑on: slow macerations, careful distillation, and a focus on clarity of flavour. Kummel itself is built around caraway, with supporting notes from fennel and cumin. In Quaglia’s version, the botanicals are infused gently to keep the aromatics bright and lifted, giving you that classic sweet‑spice profile without heaviness. The result is clean, aromatic and slightly herbal, with the caraway leading but never overwhelming.
