Cimarrón comes from Atotonilco El Alto in the highlands of Jalisco, a region where altitude, red volcanic soils, and strong sunlight give agave a naturally sweeter, more aromatic profile. The distillery behind it works with mature, high‑brix agave and keeps production refreshingly straightforward: clean fermentation, careful distillation, and no additives. The Reposado spends a short time in American oak, just enough to round the edges without muting the agave. The result is crisp and direct: roasted agave at the core, backed by light vanilla, a touch of pepper, and a faint herbal note that keeps it lively. The oak influence is subtle, adding texture rather than sweetness, and the finish stays dry and clean.
