Payten and Jones are a producer that seek to work as sustainability as possible, producing natural wines with balance and reflect the terroir and approach of the owners. This Chardonnay was aged in 50% barriques and 50% stainless steel, unfined and unfiltered, and certainly benefits from a little air before drinking. Aromatics of peach and creamy lemon posset, this continues to the palate joined with a vein of minerality. Perfect with roast chicken or schmaltz on toast!
