Demeter Zoltán’s dry Tokaj comes from one of the most historically important wine regions in Europe, a place where volcanic geology and centuries of winemaking tradition shape everything in the glass. Tokaj sits in northeastern Hungary at the meeting point of the Zemplén Hills and the Great Plain. The vineyards are rooted in a patchwork of volcanic tuffs, rhyolite, and andesite, often mixed with loess. This combination gives the soils both structure and a distinctive mineral edge, something that shows clearly in the region’s dry wines as much as in its famous sweet ones. Demeter works with small, carefully chosen parcels around Mád and its neighbouring villages, areas long recognised for producing some of Tokaj’s most precise and expressive fruit. These sites sit on slopes with good drainage and varied exposures, allowing him to pick for freshness and detail. His approach is low‑intervention and vineyard‑led, aiming to let the character of each parcel speak without excess weight or oak influence. The wine is clean, focused, and built around Furmint’s natural tension. Expect crisp pear, green apple, and citrus, supported by a firm mineral line from the volcanic soils. The palate is taut and dry, with a slight savoury edge and a long, stony finish. It’s a precise, quietly powerful expression of Tokaj’s geology and its long history of thoughtful, site‑driven winemaking.
